Orange Soy Glazed Salmon  (feeds 2)

 

1 large piece of salmon (approx. 1 lb)

Pinch of salt and black pepper

1/3 cup black sesame seeds (optional-to coat salmon if desired)

2 TBSP your choice of oil

 

Heat saute pan with oil.  Season salmon and coat with sesame seeds if desired.  Sear salmon 3-4 minutes on each side.  If salmon needs more cooking time, finish in a 350 degree oven for about 5-10 minutes, until desired doneness is reached.  Remove salmon from pan, saving pan for deglazing.

 

Glaze

2 cloves of garlic, minced

1 oz. fresh ginger, minced

1/4 cup soy sauce

1/4 cup orange juice

1 tsp. sesame oil (optional)

 

Return saute pan to heat.  Add soy sauce and orange juice, garlic and ginger.  Simmer until thickened.  Add sesame oil, cook 1 minute longer.  Spoon glaze over salmon.  Enjoy. 

 

 

No-fat mashed potatoes (feeds 2)

 

3-4 medium baking potatoes

1/4 - 1/2 cup broth (can use chicken, vegetable, or flavored chicken broth)

 

Fill a 2 quart saucepan halfway full with cold water and a pinch of salt.  Bring to boil on the stove.  Peel and dice your potatoes into large dice.  Add potatoes to boiling water and cook until tender, approximately 15 minutes.  Drain and mash.  Add broth a little add a time until desired creaminess is reached.  Season with salt and pepper.  Optional, stir in some sliced green onions.
