German Hot Potato Salad

Amount Measure Ingredient -- Preparation Method
2 pounds potatoes -- boiled in jackets
6 slices bacon -- diced
1 large onion -- minced
1/2 cup vinegar
1/2 cup beef broth
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
2 egg yolks

Peel potatoes while warm and slice thin. While potatoes are cooking, fry bacon. When almost done add onions, Cook 2 minutes and add vinegar, broth, and seasonings. Simmer a minute or so. Beat yolks with 2 tbls. of water. Remove from heat, stir in yolks mixture. Pour over potatoes and mix gently
