Fruit Pizza (makes 2 round pizzas or 1 large rectangular pizza)


1 package sugar cookie mix, or 1 tube refrigerator sugar cookie mix

(If making your own cookie dough to cut the fat, substitute equal measurements of applesauce for fat)


Heat oven according to package or recipe directions.  Roll out or press cookie dough into pizza pan.  Bake 12-15 minutes.


1 tub of coolwhip free

1-8oz package of light cream cheese

1 tsp vanilla extract

2-3 tsp of confectioner's sugar (optional)


Assorted fruit peeled and sliced.


Mix all ingredients together until smooth.  Chill until needed.  Spread cool whip mixture onto cooled cookie crust.  Top with your choice of fruit:  raspberries, strawberries, blueberries, blackberries, kiwi, starfruit, grapes, bananas, pineapple, peaches, etc.


Note:  when using bananas or fruit that turns brown with oxidation, toss fruit into cold water with lemon juice.


If you want, you can choose to glaze the fruit pizza with apricot preserves that have been microwaved until syrupy.  Not really a necessary step if eating right away.  Cover and chill until ready to serve.
