Dessert Omelet with Fresh Fruit for four

1 cup fresh blueberries

1 cup sliced strawberries

1 tbs strawberry schnapps

4 eggs, separated

2 egg whites

¼ cup water

3 tbs sugar

cooking spray

1 tbs sifted powdered sugar

fresh mint

 

Mix fruit with schnapps and toss.

With immersion mixer and whip attachment, whip egg yolks until lemon colored.

In a mixer whip egg whites until foamy, add water and sugar; whip until stiff peaks form. 

Fold whipped eggs together.

Spray 10 inch sauté pan heat over med. heat until hot

Add egg mixture cook over med.-low heat for 5 minutes

Transfer omelet to 350-degree oven for 10 minutes.

Spoon in about ½ the fruit and fold omelet in half

Slide onto serving plate.

Spoon some fruit over omelet.

Sprinkle with powered sugar

Garnish with mint
